Gluten damages the intestinal tract and promotes autoimmune disease

It’s important to understand that gluten is a general term for a group of proteins found in grains, particularly in wheat, rye and barley – but in many other food and non-food sources. The use of GMOs in food has caused gluten content to double over the past few decades, asserts Dr. Osborne. Tragically, as much as 40 percent of the population now reacts poorly to gluten – reflecting the inability of human DNA to adjust to the massive changes in food quality and content.

Gluten also increases a protein called zonulin, which is produced in the small intestine. Zonulin breaks down the proteins in the gut that are responsible for keeping the gut lining intact, thereby creating gaps through which undigested food and proteins enter the bloodstream – also causing an immune reaction.

Go grain-free, not “gluten”- free

Even when people with gluten intolerance attempt to eat a gluten-free diet, health problems can still persist. This is because many “gluten-free” products are made with corn and rice, which – like all grains – still contain gluten proteins, says Dr. Osborne.

And, by the way, they can trigger the same type of immune response as gluten intolerance.

Even seeds and beans, which contain gluten-like proteins called lectins, can cause problems such as gastrointestinal inflammation and leaky gut. Dr. Osborne points out that all grains and legumes are technically seeds, created for the sole purpose of incubating and protecting the embryonic plant, and making them unfit for consumption. “Seeds,” says Dr. Osborne, “wage war on the human gut.”
